Oniony potatoes and noodles are an old vegetarian dish that are inexpensive and easily made. This dish tastes great when served with dill pickles. |

Peel and cut the potatoes into fourths. Put them into a pot of boiling salt water and cook for 15 minutes. In a bowl, mix the flour, eggs, butter and a pinch of salt and form a smooth dough. Using a teaspoon, cut little pieces of the dough to form noodles or Nockerl. Add the pieces of noodle dough to the pot with the potatoes and cook for another 10 minutes or until the noodles (Nockerl) float to the top. Strain the water from the potatoes and noodles.
