Oniony potatoes and noodles are an old vegetarian dish
that are inexpensive and  easily made. This dish tastes great when served with dill pickles.

Peel and cut the potatoes into fourths.  Put them into a pot of boiling salt water and cook for 15 minutes.  In a bowl, mix the flour, eggs, butter and a pinch of salt and form a smooth dough. Using a teaspoon, cut little pieces of the dough to form noodles or Nockerl. Add the pieces of noodle dough to the pot with the potatoes and cook for another 10 minutes or until the noodles (Nockerl) float to the top.  Strain the water from the potatoes and noodles.

Peel the onions and chop them finely. In a frying pan, melt the 3T of lard or butter and then add the onions. Fry the onions until they are golden to dark brown. If desired add some more butter or lard to the onions. Pour the onions over the potatoes and noodles and mix lightly. Add salt to taste and serve hot.
