Roast the aubergine (best over a coal grill) approximately 20 minutes, till there are around soft. Take the skin off and chop the aubergines finerly. Mix in sequence, pepper, salt, onion, mayonnaise (aioli) and vinegar with a staff mixer at low speed. Instead of mayonnaise you may use also only oil. See more alternatives... to spice it. |
